I have always LOVED pizza. Over the years, I have tried to make healthier pizza choices though. First, I started adding veggies, then I would order thin crust over regular. A few years ago I started making my own cauliflower crust – before it became mainstream, might I add! Making your own cauliflower crust is a lot of work and it’s tough to get it into the perfect circle shape. Whole Foods has solved that problem because they now have pre-made cauliflower crust in their freezer section with a clean ingredient list! I’ve heard other grocery stores are carrying it as well.
If you see cauli-crust on a restaurant menu, make sure you ask what’s in it. CPK (California Pizza Kitchen) came out with cauli-crust a few months ago, but it’s really made with cauliflower and rice flour. I’m guessing they don’t call it “rice flour crust” because that’s not anywhere near as popular as the cauliflower crust craze. It also only saves you 35 calories per slice compared to the traditional dough/crust. I’m not knocking their cauli-crust or the restaurant itself, I’m just saying make sure you don’t think you’re eating pure cauliflower in the crust if you’re not. Note: The 365 brand Whole Foods version is primarily made with cauliflower and mozzarella cheese (no flour).
