Spinach, Tomato & Feta Rotini Pasta
A bed of fresh spinach is topped with rotini pasta, halved cherry tomatoes, feta cheese, garlic and olive oil. This is one of my favorite meals because of how quick, easy and versatile it is.

Ingredients

  1. Cook pasta according to package.
  2. While pasta is cooking, place spinach in a large bowl and set aside. Dice the garlic clove and set aside.
  3. Once pasta is finished cooking, strain and pour directly onto spinach leaves. This will soften the spinach leaves allowing them to wilt slightly and not be as crunchy. Let sit for 3-5 minutes.
  4. Mix in feta cheese, tomatoes, garlic and olive oil.
  5. Serve hot or refrigerate and serve cold.
Recipe Notes

Optional: add sliced steak, chicken breast, shrimp or any array of diced vegetables.
