This pasta is the perfect 20-minute weeknight dinner meal! A bed of fresh spinach is topped with rotini pasta, halved cherry tomatoes, feta cheese, garlic and olive oil. This is one of my favorite meals because of how quick, easy and versatile it is.
I have been making this pasta dish for years. An old friend introduced me to it, and over the years I have made some changes here and there. This is my favorite mix of ingredients for this particular dish, but there are so many ways to make it delicious and countless mix-ins to try. For all of you carnivores, this pasta would taste great topped with chicken, shrimp or steak. Diced peppers, broccoli and sun-dried tomatoes also make good additions.
There is a lot of controversy around pasta these days. I think a good starting point to decide which type you should choose is to determine whether or not you have any sensitivities to certain ingredients. You don’t necessarily have to be gluten-free to have food sensitivities. It could be that you just feel bloated and tired after eating wheat (like I do). In my opinion, the best way to figure out how you can fuel your body with the best foods to perform optimally, you should do the Whole 30 Program. The Whole 30 program is based on the premise that you eliminate grains, dairy, sugar and alcohol from your diet for 30 days and then slowly add the food groups back one-by-one to see how you feel. You can learn a lot by doing this.
I’ve learned to stay away from wheat as much as I can. The best alternatives I’ve found are made from almond flour, chickpeas, brown rice and/or quinoa. I recommend trying Trader Joe’s brown rice & quinoa pasta as well as Banza’s chickpea pasta (linked below).
