My girl friends have been hosting themed dinners for a few years now, alternating themes and houses. A few months ago the theme was “Paleo/Whole 30 approved” so I decided to make some healthy chocolate chip cookies. They’re not something I would recommend while you’re following a strict Whole 30 program, but they are a super healthy option for a girls dinner – themed or not! All the girls loved them and everyone I have made them for since have loved them too.
- One thing I always love is using the least amount of dishes possible when I cook or bake. It’s almost like a game or a competition to me. So for this recipe, and hopefully the many more that follow, you’ll dirty the least amount of dishes possible. Also meaning there is less to clean up… #winning
- I’m going to go out on a limb with this one. I hate using the microwave and also standing near one when it’s turned on. So a quick tip when melting the coconut oil is to measure it out in a glass measuring cup and pop it in the oven while it’s preheating. By the time you’re ready to use the coconut oil in the recipe (step 4), it will be ready to go if you follow this method. Or, you can use the microwave if you’re not like me.
You can display your cookies on a pretty plate or cake stand like I did in the pictures above, or you could take them to a whole different level. You could also make this coconut whipped cream to dip the cookies in, or make ice cream cookie sandwiches by putting a layer of whipped cream between 2 cookies and freezing.
TIP: using these Enjoy Life mini chocolate chips will give you just the right amount of chocolate in each bit and they’re the “cleanest” chocolate chips I’ve seen.
