Chocolate Chip Zucchini Bread
This Chocolate Chip Zucchini Bread is so delicious it will be hard to have just one piece! If you do have more than one, don’t feel bad because this recipe is free of refined sugar, grains and gluten. It is toddler approved and a healthy option for breakfast or a snack.

  1. Preheat oven to 375 degrees. Line a loaf pan with parchment paper or grease with melted coconut oil.
  2. In a large mixing bowl, add eggs, melted coconut oil, apple sauce and coconut sugar and vanilla extract. Beat on medium until well combined.
  3. Add almond flour, tapioca flour, baking soda and salt to the mixture until just combined.
  4. Pat the grated zucchini well with paper towels absorbing all moisture/water and then add to the mixture until just combined. (You may need to ring the zucchini out while it is between the paper towels to get all of the water out)
  5. Stir in the mini chocolate chips.
  6. Pour the batter into the lined or greased loaf pan and bake for 60 minutes.
