This Chocolate Chip Zucchini Bread is so delicious it will be hard to have just one piece! If you do have more than one, don’t feel bad because this recipe is free of refined sugar, grains and gluten. It is toddler approved and a healthy option for breakfast or a snack.
The Most Important Meal of the Day
First, I want to start out just by saying how much I love breakfast foods. It is by far my favorite meal of the day and usually the night before, I am already looking forward to the next day’s breakfast. Having breakfast, or not having breakfast, can set the tone for the entire day ahead. My breakfast usually requires 3 things: protein, healthy fats & carbs (the healthy kind).
Now that we have that out of the way, I’m also a firm believer that if you can get vegetables in with the first meal of the day, you are “ahead” for that day. Maybe it’s just mental for me, but who cares. Has anyone ever said “You know what? I think I had too many vegetables today”… I don’t think so.
A few ways we get vegetables in for breakfast in this house are:
- scrambled eggs – usually frozen chopped spinach, cauliflower puree or diced red bell peppers
- breads like this one
- cold-pressed juice – stay tuned for my go-to green drink recipe
For this recipe, I knew I wanted to create something for mornings on the go or to make ahead – to freeze or refrigerate. When choosing the ingredients for the bread, I knew it had to be refined sugar, grain and gluten free because who has time to feel bloated and sluggish after eating the most important meal of the day? This recipe includes protein from the almond flour and eggs, several servings of vegetables from the zucchini and healthy fats from the coconut oil.
Make sure you squeeze the shredded zucchini between paper towels before mixing it in to the batter. It’s important to get as much of the water out as possible so your bread doesn’t end up mushy. Ring the paper towels out with the zucchini between if you need to. Do not skip this step!
