These Baked Zucchini Bites are an easy side dish or appetizer everyone will love. Fresh slices of zucchini are dipped in almond flour, egg wash, breadcrumbs and seasoning. These are perfect to make for the next party you go to or they could be added to your week night dinner rotation. Bonus: this recipe can be very easily adapted to be Paleo friendly (see notes).

These baked zucchini bites hit the spot if you are craving something filling yet healthy. They are addicting and my not-so-secret ingredient is my absolute favorite seasoning salt called Borsari’s. You can buy it here or at Whole Foods (at least the Whole Foods in Annapolis carries it!) I’ve made these bites for a few parties recently and even people who “don’t like zucchini” have cleaned their plates. Additionally, they are quickly climbing to the top of my toddler’s favorite foods list!
If you’re going to use a mandolin like I did to slice the zucchini, make sure you use the end cap as pictured or a thick glove that a blade would not be able to cut through. I’ve learned this one the hard way…
When choosing your breadcrumbs, read the ingredients label closely. I recommend Whole Foods house brand (365). They have a clean ingredients list. In the notes section, I also mention that you can make this recipe Paleo friendly by using ground up Simple Mills crackers to make these!

- 2 medium zucchini
- 1/2 cup blanched almond flour
- 3/4 cup bread crumbs (Whole Foods 365 brand is recommended)
- 2 large eggs (beaten)
- 1-2 tbsp olive oil
- 1 tbsp seasoning salt (Borsari brand is recommended)
- 1 cup pizza or marinara sauce

- Preheat the oven to 375 degrees and line a large baking sheet with parchment paper.
- Slice zucchini with a mandolin or by hand with a knife.
- Set up 3 large plates for the almond flour, eggs and bread crumbs (as pictured above).
- Dip the sliced zucchini pieces in the almond flour, then the egg wash, then the bread crumbs.
- Place the breaded zucchini bites in a single layer on the lined baking sheet and drizzle with olive oil and seasoning salt.
- Bake for 20 mins at 375 or until the bites are golden brown.
- Serve immediately with pizza sauce or marinara sauce.
To make this recipe Paleo friendly, grind up Simple Mills crackers to the consistency of breadcrumbs and use them to substitute the actual breadcrumbs.
